We do our best to please our customers with fresh Tosa ingredients that match the season, such as the first bonito in spring, the returning bonito in autumn, and conger eel in summer. We also have rare ingredients unique to Kochi Prefecture, such as moray eel, shamo fish, and raw whitebait.
