Founder of MU Artisan Soy Sauce, Shirley Chia guides guests on how to make and age your own soy sauce.
Shirley is a third generation natural-ferment soy sauce artisan. She is also the founder of MU Artisan Soy Sauce, a business she started in 2019 to try and keep traditional soy sauce making alive.
In this session, guests will be introduced to the intricate process of making fermented soy sauce, exploring its history and cultural significance. You will participate in a blind tasting to identify key characteristics of various soy sauces, then learn to make your own soy sauce - mastering the selection of ingredients and fermentation techniques. Guests will also get to bring home a small jar of “koji” plus brine to continue fermenting in your own kitchen.
