A full-day symposium where trends, ideas and the big issues shaping the food world in Asia today are discussed and divulged. Informative, enlightening and possibly even controversial, this series of talks and panel discussions are designed by the F&B industry for the F&B industry: chefs, cooks, producers and F&B professionals.

Hear from industry greats like Loh Lik Peng, CEO of Unlisted Collection and the umbrella for some of the best restaurants Singapore has seen. Just how does he pick so many winners? Legendary chef, Daniel Chavez will talk about the rise of vegan and vegetarianism- is it a trend or is it here to stay? Are people looking to eat healthier at restaurants? When weighing up healthy eating, isn’t it better to look at how our ancestors ate? Rishi Neleendra will discuss the transition from chef to businessman, and Jordy Navarra will outline The Art of Hospitality: Building the connection between the kitchen and the Front of House.

There will be conversations on sourcing and traceability, dealing with no-shows diplomatically and without losing money, authenticity in traditional cuisine and the growing role of women in today’s commercial kitchens. Top that off with some great food, plenty of networking and a cocktail hour to wrap up the day.
