The chef's special demi-glace sauce, with its rich flavor, enhances the hamburger steak and omelet rice to a deeper flavor. The Bagna Cauda, which uses rare root vegetables such as red radish and fruit carrots, is a special dish that can only be enjoyed in winter, when there is a wide variety of root vegetables.
