The sole is lightly grilled before being boiled, and this creates a deep flavor. It is served with seasonal vegetables, and with ingredients such as the mountain vegetables of spring, or the root vegetables of winter, each seasons' flavor can be enjoyed. We ourselves went down to the boats of Setouchi fishermen and made contracts with ones whose skills we trusted. Every morning the freshly caught fish are delivered, and they are so fresh that they can be served as they are. Please enjoy that day's recommended fish. In order for the customers to be able to enjoy the sight of us cooking, we designed our restaurant so that everything behind the counter can be seen.
