Hitsuji-en is popular for its high-quality lamb Jingisukan, which is soft, smooth and doesn't have a gamey taste. Raw lamb is sliced to about 8 mm thick after ordering by hands, making the texture perfect. When it comes to classical dishes in this restaurant, Jingisukan is the first choice. They daringly choose not to use a special pot for their Jingisukan, opting to grill the meat on a special futoshimo (thick grill net) over charcoal. What’s more, grilled lamb with green onion sauce or putting the lamb in heated cheese, making it into a cheese fondue style are also popular.
